Ingredients
4 whole wheat tortillas
One can of refried beans
3 garlic cloves
Half a cup of low-fat sour cream
8 oz. Lean ground beef
Half a cup of salsa
One cup of chopped lettuce

Instructions
Cook the ground beef and the garlic medium heat.
Add refried beans and stir until warm.
Divide the mixture onto the tortillas.
Add salsa, lettuce and sour cream, fold and enjoy
them!

Ingredients
2 tablespoons olive oil
1 small onion, thinly sliced
1 pepper (paprika) small red sliced
10 oz. pasta sauce
4 flour tortillas for burritos
Servings: 4
Prep Time: 10 minutes
Cooking time: 13 minutes
Preparation
In a nonstick skillet, heat 1 tablespoon of olive oil
over medium-high and cook the onion and red
pepper, stirring occasionally, for 4 minutes or until
tender.
Reduce heat to medium and then add 1 1 / 2 cups of
pasta sauce. Simmer, stirring the sauce
occasionally, for 5 minutes or until thickened. Spread
tortillas evenly with sauce mixture, taking care to
leave an all around 1-inch border uncovered. Put
cheese on top and fold it in half, and set aside.
Clean the pan. In same skillet, heat remaining
tablespoon of oil over medium heat and cook the
quesadillas, turning once, for 4 minutes or until well
browned and cheese melts. Cut the quesadillas into
wedges and use the remaining pasta sauce as a dip.
